Instant Pot Chicken Broccoli Rice Casserole  Ingredients 1 Tbsp Olive Oil 2 Tbsp Unsalted Butter 1 med Onion, chopped 1 1/2 lbs Chicken Breast, cubed 1 tsp Kosher Salt (or 1/2 tsp table salt) 1/2 tsp Pepper 1/2 tsp Garlic Powder 1/2 tsp Onion Powder 1/4 tsp Thyme Leaves (dried, not ground) 3 cloves Garlic, finely minced 1 1/2 cups Long Grain White Rice, well rinsed 2 cups Chicken Broth, low sodium 2 cups Cheddar Cheese, shredded (I like sharp) 2 lbs Frozen Broccoli Florets Instructions Turn on the Sauté setting. Southwestern Crockpot Chicken Tacos INGREDIENTS 1 pound boneless skinless chicken breast 1 tablespoon taco seasoning, or more to taste 1 jar (16-oz) salsa, use half of your jar for less saucy chicken; see notes for more info 1 can (15-oz) black beans, rinsed and drained 1 cup frozen corn 1 onion, coarsely chopped taco shells and toppings you like INSTRUCTIONS Place all ingredients EXCEPT for the taco shells and toppings in a 5-6 quart crockpot. Stir, making sure there's some sauce underneath the chicken so it doesn't end up sticking to the bottom. Cook on LOW for 8 hours or on HIGH for 4 hours. The Pioneer Women's Blackberry Cobbler Ingredients 1 1/4 cups + 2 tablespoons sugar  separated 1 cup self-rising flour* see notes for easy homemade version 1 cup whole milk  see notes 1/2 stick butter  melted 2 cups fresh (or frozeblackberries  rinsed and patted dry. Vanilla ice cream  for serving Instructions Preheat the oven to 350 degrees. Combine 1 cup of sugar with 1 cup of flour in a large bowl. Stir in the milk, then the melted butter. Mix until well-combined. Pour onto the bottom of a greased 9x13 baking dish. Distribute the berries throughout the top. (They’ll sink in further as they bake.) WINTER SALAD This light and crisp winter salad is full of seasonal fruits and nuts like pears, cranberries and pecans and topped with a homemade vinaigrette.  INGREDIENTS 10 oz Mixed greens 3 Pears,  , chopped 2 c Pecan halves 1 c Dried Cranberries 1/2 c Blue Cheese,  , crumbled VINAIGRETTE 6 tbsp Champagne Vinegar 2 tbsp Dijon Mustard 1/2 c Olive Oil 1/4 tsp Salt INSTRUCTIONS 1.                    In a large bowl add greens, pears, dried cranberries, and pecans.  2.                    In a small bowl whisk together the vinaigrette ingredients.  3.                    Pour vinaigrette over salad and toss 4.                    Top with crumbled blue cheese. BREAKFAST ROLLS Breakfast Rolls filled with scrambled eggs, bacon, sausage & cheese then rolled in homemade dough and baked to perfection. These rolls are perfect for breakfast, brunch or dinner! Ingredients 1 cup warm water 1 TBSP yeast 1 TBSP sugar 1 TBSP oil 1 tsp salt 2 1/2- 3 cups flour 2 TBSP melted butter 2 cups shredded Cheddar Jack cheese 12-15 cooked sliced of thin bacon chopped 6 cooked breakfast sausages chopped 4 large eggs scrambled Instructions 1.                    Combine warm water, yeast and sugar in a mixing bowl and let sit for about 3-4 minutes, until yeast is bubbling up. Add in oil, salt and flour. Start with 2 1/2 cups of flour, then add more until the dough cleans the sides of the mixing bowl. (I use a mixer for this part as it makes it just so much easier!)
